If you're a banana lover, I suggest you close your ears. No pelting me with horrid banana peels either. You see, bananas and me.......well.....we just don't get along. I can't bear touching nor smelling raw bananas. Don't get me started on eating those mushy things either. Lil L had had to ask friends of mine to help her peel hers when she was younger because this mom ain't doing it. BUT put those wieners, I mean bananas into a cake and I can scarf down the whole lot. No, don't bother analyzing this strange fact. You may end up getting a headache trying to understand my baffling eccentricities.

Oddly enough, I've never eaten a banana cake but I found this incredibly easy and utterly scrumptious recipe from BBC Good Food magazine which I just had to try. I couldn't help adapting it a little because most recipes contain way too much sugar and unnecessary additions. The best cakes are simple, requiring none of those pretentious frosting nor artifice but made of a few but the best ingredients.What you end up with is a buttery, melt in your mouth and incredibly moist banana cake. Ingredients:
140g/5oz butter, softened (plus extra for the tin)
110g/5oz caster sugar
2 large eggs, beaten
140g/5oz self-raising flour
1 tsp baking powder
2 very ripe banans, mashed

1. Heat oven to 180˚C/160˚F fan/Gas 4. Butter a 2lb loaf tin (or any loaf tin) and line the base and sides with baking parchment paper.
2. Cream the butter and sugar until light and fluffy. Slowly add one egg at a time.
3. Fold in the flour (but don't beat), baking powder and bananas.
4. Pour into the tin and bake for about 30 minutes or until the skewer comes out clean.
5. Cool in the tin for 10 minutes and remove to a wire rack or cake stand.

  1. Oh my goodness - I can't believe you did banana cake. I made one after I saw a recipe in the Waitrose paper that we got sent. It was the biggest brick I ever made. I tried so hard and the hubs was so proud of me for trying but even he couldn't stomach it. One mouthful and that was it - straight in the bin. On the outside, it looked lovely though. I took a picture of it just to remind me not to attempt it again. I don't like bananas either unless in banana milkshake/ice cream or banoffee pie. Don't like them as a fruit but I make the kids eat them - I'm such a food hypocrite.

  3. How funny that you don't like touching raw bananas! I did once meet someone who did not like being seen eating them (for reasons that seemed obvious to her) Wish i could make a decent banana cake as we always have B's going off. THis recipe seems one to rival Madeline's (my Mum's) who can do that Kiwi pioneer thing of whipping one up in time it takes you to walk in from the cow sheds.

OHHHHHHHHHHHH MY GOD! we are like cut from the same cloth i swear! i cannot STAND banana's!! they're just a disgusting fruit through and through to me!! they're all mushy and bleh! ugh they give me the heebie jebbies! but I LOVEE BANANA BREAD TOO!! hahahaha i totally get your eccentricities. can't stand banana's but love banana bread! what are you gonna do?? haha so going to try your recipe love!! :)

  12. Love some banana bread/cake. I can't handle it when my bf makes it because then it becomes this need to finish it within 24 hours. I don't even have control over myself, it's like I exit my body and observe myself scarfing it down.

  16. You relationship with bananas sounds like my relationship with durians..lol! I hate durians but love durian "quei", cakes and other by-products.

  18. I have a lot of respect for the way you alter the recipes. I made brownies from the recipe that you shared on here and they are by far the best I've ever made or had. And so easy, it's consistent - coming out perfect each time. I'm not a banana person either, but I picked up three from the fruit market today and I do love a good banana cake, especially if it has some walnuts/crunch in it!
