
Last year, I posted a recipe for Chocolate Brownies but lately, I've been on a quest to try different versions in order to locate one that not only tastes good but can be whipped up quickly. This American half cookie half cake concoction was purportedly to be invented by a housewife in the US back in the early 20th century. However, the history behind chocolate brownie is still shrouded in mystery as there are many variations to its origin.

The high chocolate and butter content to flour creates a moist cake with a crunchy exterior. The most important thing to remember is not to overcook the brownie as it's meant to be slightly fudge like. This is an adaptation of Jo Pratt's from her book "In the Mood for Food". I've made a number of changes to the recipe to suit my palate. I hope you like them as much as I do!


Ingredients
200g unsalted butter
200g dark chocolate (70% cocoa solids), chopped (or just smashed with a rolling pin in its packaging)
3 large eggs
220g caster sugar
2 tsps vanilla extract
125g plain flour
a pinch of salt
Method
1. Preheat the oven to 180 C/ fan 160 C/ fan 4.
2. Grease and line the baking tin with greaseproof or parchment paper. You can either use a 20cm x 30cm and 3cm - 4cm deep rectangular baking tin or in my case, the batter was enough to make 12 cupcakes for the kids as well as plenty left for 16cm x 22cm pyrex tray.
3. Melt the butter and chocolate either in a bowl over a pan or simmering water or gently in the microwave.
4. With an electric hand whisk, beat together the eggs, sugar and vanilla extract until they are lovely, thick and creamy. Mix in the melted chocolate and butter. Mix in the melted chocolate and butter. Finally stir in the flour and salt.
5. Pour into the baking tin and cook for about 25 minutes until the top is cracking and the center is just set. Leave to cool in the tin for about 20 minutes before cutting into squares.

Your recipe seems easy enough for a lazy baker like myself who tends to open a pre-mixed package and call it a day. I am all fired up now, perhaps i should whip it this weekend. DeleteBrownies from scratch. You put me to shame! :) Seriously, one of my DD's favorite things in the world is to bake brownies with me but I just use Duncan Hines Chewy Fudge mix. We will have to try this one.
